
Hello Lovely! Yesterday, I decided to have fun with my lunch. So, I set out with little change in my hands and bought vegetable, plantain and some little ingredients. I had rice at home already, so I did a nice com-bi-na-tion! 😋That’s what you see up there ☺️🔥.
How’s your day going? Mine’s been delicious! 😋 You can trust that I had another delicious food today, in fact, I just finished a hot plate of swallow and draw soup. (Another topic for another day☺️🤭😄). I believe everyone has the ability to make magic in the kitchen. Yes, you have the capabilty to keep yourself healthy, and food is a major way to ensure that. Food is not just for the mouth or for the belly, but for the whole body. You’re what you eat. If your food is healthy, then you’ll be healthy too! If you eat junks all the time, then you’ll look like…you know 🌝.
So I’ll be teaching you how to help yourself to a beautiful plate of Concoction Rice, Efo riro and Fried Plantain. It’s a delicious recipe you would want to try. So dear, let’s run into the kitchen!✨✨🏃🏃🏃👩🍳.

CONCOCTION RICE
Ingredients:
- 2 cups of rice
- ½ cup of beef stock
- 5 medium size tomatoes
- 10 bells of rodo (pepper)
- 1 big bulb of onion
- ⅛ cup of vegetable oil
- Salt
- Seasoning cubes
- Garlic and Ginger
- Water
Procedures:
- Chop onions into tiny cubes and heat oil in a fry pan. Oil should not be too hot or lukewarm.
- Pour chopped onions into the oil and add the stock to the frying mixture.
- Add salt, seasoning cubes, grated ginger and garlic to the mixture. Ginger and garlic should be in tiny quantity else it’ll take over the taste of your food. The ginger and garlic gives your food a nice taste and smell like that of chicken. It’s part of the secret caterers use for party Jollof😋 .
- Allow mixture to boil together for two minutes then add blended pepper and tomato to it. Allow to fry for 4 minutes and stir.
- Wash rice in a bowl and sieve into a pot. Pour in your pepper and tomato sauce and add sufficient water to cook. Allow to cook until soft enough and water is dried up. Then serve.
EFO RIRO
- Ugwu leaves
- Rodo
- Onions
- Red oil
- Crayfish
- Seasoning cubes
- Salt
- Stock (optional)
Procedures
- Fry onions and peppers in heated red oil.
- Add crayfish and other available ingredients.
- Add chopped ugwu leaves and allow to cook for 3-4 minutes. Serve.
FRIED PLANTAIN (aka DODO 😋)
Ingredients
- Four pieces of plantain
- Vegetable oil.
Procedures:
- Cut plantain into desired shape. Cubed, slant, anything you want. My sister, my brother, be creative! 😉
- Heat oil and put plantain into the hot oil. Allow to fry and flip at intervals.
- Fry till golden brown. Don’t allow to become to brown or to burn, it’s going to be a very painful something 🤦.
Serving

Bring out the creative being in you! Yes, you can do it! You see, the sight of the food matters a lot. If you go to a restaurant or eatery and everywhere smells nice- like Yorubas will say; “O n ja fikan fikan!” 😄😄😅-so in anticipation, you order for food and when they bring you your order it’s looking like a food that has been seriously massaged together with a baby’s hands. Urgh!😷🤧 I don’t know about you, but I am so not going to eat it! In fact, I’ll demand to see the manager of the eatery. He has some big questions to answer. Yes, no time for nonsense 😅😅😂.
